It’s Labor Day Weekend and I’m sure everyone’s out there drizzling their hot dogs with ketchup and schmearing their burger buns with mustard and that’s all fine and good but I’m here to say that in the world of condiments, mayo is and always will be my number one. And you know what’s even better than mayo? Aioli, aka fancy mayo!!! I have a great, summery aioli recipe coming at you this week but for now I want to know…
Coming from a Trini perspective...definitely shadon beni/bandanya sauce (pronounced "shadow beneee": try it on your bake and shark or doubles the next time you go to Trinciti on Lefferts Blvd.) and garlic sauce - definitely get this on your Trini bbq and fries (bbq lamb and fries specifically) from Avenue BBQ Hut on Liberty Avenue. Thank me later :)
Terrapin Ridge Farms Everything Aioli has become my go-to condiment. It reminds me a lot of all the things you’d throw on your backyard bbq burger and has a surprisingly strong (and delicious) pickle note. I love that shit!
Kewpie mayo is up there. Put a few drops of Golden Mountain Seasoning Sauce with it and you have an MSG thrill ride. Hoff’s Wake Up Call hot sauce has me under its spell currently.
kewpie mayo and butter because, yes, I use enough butter to count it as a condiment lol

tough to choose between mustard (so many different kinds!) and hot sauce (cholula specifically)...and mayo is up there too since it's so versatile!

Chili oil & grainy mustard
Fries are just a vessel for ketchup imo but also love HP sauce.
I like Ketchup for fries and potatoes.
I like Mayonnaise for sandwiches and burgers.
I like soy sauce for everything else!!
